One-pot Garden Vegetable Marinara with Spinach Fettuccine

With all your daily dose of greens this one pot marinara sauce is one of our pasta sauce staples. It looks like a riot of colours on a plate and tastes divine. Hope you enjoy cooking up your own pasta bowls of goodness with this super simple recipe. Buon Appetito!
To create this you need:

Donna Pastaia's Spinach Whole Wheat& Semolina Fettuccine 125gms
For the marinara sauce:
Tomatoes - 400gms diced 
Garlic - 4 cloves finely chopped 
Onion - 1 medium/small finely chopped
Zucchini - 1cup diced
Bell peppers (red / yellow)- 1 cup diced
Carrot - 1/2 cup diced
Mushrooms - 1 cup gently hand torn
Mixed italian herbs
Salt and pepper to taste
Recipe:
Saute onions and garlic with 2 tbsp olive oil. Add diced tomatoes and cover with a lid to simmer on a medium flame for 10-15 mins. 
Once the tomatoes are tender, add the zucchini, bell peppers, mushrooms and carrots and season to taste with salt and pepper to it. Let this cook for another 15-20 mins on medium heat. 
While the sauce does it's magic in the pot, add pasta to boiling salted water and cook for 6-7 minutes. 
Toss pasta straight into sauce for the last finish and bring it together with mixed herbs and fresh basil. 
We also added those beautiful zuchini flowers for some extra flavour.
*Feel free to replace and add vegetables at your own convenience, just make sure you have 4-5 cups of your chosen vegetables to strike a healthy balance! *
